Super easy side dish – Glazed Carrots

This side dish is not only easy but will surely get your kids ( or man child ) to eat thier veggies ! It only has three (3) ingredients and doesn’t need anything added to it.  No brainer on weekdays or lazy weekends when you want to cook at home instead of spending money at your local fast food. 


1-16oz bag of baby carrots or 6 medium size carrots peeled and cut into 1/4 inch disks 

3/4 cup of light brown sugar

5 tablespoons of Country Crock Vegetable Spread or salted butter 

Tools Needed:

10 inch fry pan 

Rubber spatula 



1/2 cup measuring cup

Directions: Wash the baby carrots or cut carrots throughly and drain in the strainer so you will not add extra water to the carrots. 

While they drain, add the butter or vegetable spread to the fry pan on medium heat. As it starts to melt add the light brown sugar  and stir with the rubber spatula ( I use a rubber spatula because sometimes it can turn into caramel and it’s harder eat it off a metal spoon lol) and being to a boil. 





Add the carrots and mix together. Let cook for 10-15 minutes on medium heat. It will be slightly crunchy at this point. If you want it softer cook longer.

Tonight we had it with salty white rice and talapia-Yummy!
