Breakfast Banana Bread

Have you ever had bananas you were ready to throw away?

I personally try to use everything I can and try not to be wasteful.

So when I had four overripe bananas, my thought was banana bread!

This the recipe I follow.

Tools Needed:

Hand Mixer or Kitchenaid

9X4 Pan

Cooking Spray

1  and 3/4 measuring cup

1/2, 1/4 and 1 teaspoon

1 tablespoon

Your preheated oven at 350 degrees f


4 Overripe Bananas

3/4 cup of Light Brown Sugar

3/4 cup of White Sugar

2 Eggs

2 tsp of Vanilla

2 table spoons of Country Crock Spread

1/2 tsp baking powder

1 tsp of Baking Soda

1 tsp of Cinnamon

1/4 tsp of Nutmeg

2 Cups of All Purpose Flour

1/2 tsp of Salt



Put the bananas and sugars in a bowl and mix until sugar is incorporated ( I usually do not put the speed higher than 6 or medium). Add the 2 eggs, cinnamon, nutmeg, vanilla mix together, stop mixer and add 2 tablespoons Country Crock Spread and mix again. Once all incorporated add 1 cup of flour, baking powder, baking soda, salt mix together until almost smooth, add the remaining cup of flour and finish mixing together, this will way it will not get over mixed.

Spray your pan with cooling spray and add mixture

Heat your oven to 350 degree f and place in oven for about an hour, if you stick in a toothpick it will be moist not clean. At that point I will take it out and let it rest and the bread will finish cooking. After about an hour, I serve it with maple syrup.
